Sernik kokosowy na 4 urodziny Creative in Kitchen!

Co roku szykuje dla Was coś słodkiego na urodziny blogowe. Tym razem lekki sernik kokosowy z galaretką porzeczkową – niewiarygodnie pyszny i bardzo prosty! Taki słodki akcent na zakończenie wakacji. 🙂

Nie mogę uwierzyć, że blog ma już 4 lata! Zleciało jak jeden dzień. Wiem, że ostatnio strasznie zaniedbałam Was i bloga. Było to spowodowane ogromnymi zmianami w moim życiu. Od tej pory stoję przed ogromnym wyzwaniem pogodzenia studiów, pracy i w dodatku prowadzenia bloga. Trzymajcie kciuki, bo nie chce nikogo zawieźć! 🙂
I tego sobie życzę w dniu 4 urodzin Creative in Kitchen! 🙂

składniki:
275g twarogu półtłustego
3-4 łyżki cukru lub miodu
3 jajka
1 łyżka mąki ziemniaczanej
400 ml mleczka kokosowego (stała część)
porzeczki lub inne sezonowe, kwaśne owoce
1-2 łyżeczki agar agar (lub żelatyny)

Białka oddzielamy od żółtek i ubijamy na puszystą pianę. Stałą część mleczka kokosowego ubijamy chwilę na lekką pianę. W misce łączymy żółtka, cukier lub miód, twaróg i mąkę ziemniaczaną. Następnie dodajemy śmietankę kokosową i delikatnie łączymy. Na koniec dodajemy ubitą pianę z białek. Masę przelewamy do tortownicy. Pieczemy sernik 60 minut w temp. 160 stopni (piekłam na środku piekarnika). Porzeczki wrzucamy na patelnię. Dusimy je przez 5-7 minut. Kolejno dodajemy agar-agar i dusimy jeszcze do momentu, aż galaretka zacznie tężeć. Gdy ciasto jest jeszcze ciepłe, wylewamy na wierzch galaretkę kokosową. Odstawiamy do całkowitego wystygnięcia.
