Coraz bliżej Święta, czyli rybno-krewetkowe curry z dynią

obiad, Święta, zdrowo / niedziela, 13 grudnia, 2015
Część z Was na pewno pomyśli, że pomyliłam się, że dodaje curry jako danie na Święta. Uwielbiam tradycję, jednak pomyślałam, że w Drugi Dzień Świąt możemy zaskoczyć Naszych Gości podając im właśnie takie curry! Czasem warto poeksperymentować.

Przepis pochodzi z książki ‘Ryby są super’ Karola Okrasy i Doroty Wellman. Jednak jak każdy kucharz musiałam co nieco zmienić (użyłam dorsza zamiast czarniaka i nie dodałam zielonej papryczki chilli).
P.S. Książkę możecie zdobyć już za 1 grosz! Wystarczy zrobić 6 razy zakupy za min. 50 zł w Lidlu i książka może być Wasza! 🙂

składniki:
na 5-6 porcji
500 g filetów z dorsza
300 g krewetek
sok z połowy limonki
sól, pieprz
450 g dyni (użyłam mrożonej)
400 ml mleczka kokosowego
1 duża cebula
2 ząbki czosnku
pęczek kolendry
2 łyżeczki drobno posiekanego imbiru
olej rzepakowy
2-3 łyżeczki czerwonej pasty curry lub domowa alternatywa, gdy nie ma w pobliskim sklepie:
-3 łyżeczki koncentratu pomidorowego
-sok z połowy limonki
-2 łyżeczki posiekanej kolendry
-chilli (1/2 łyżeczki)
-curry (1/4 łyżeczki)

Filet z dorsza obieramy ze skóry i kroimy na niewielką kostkę i wrzucamy do miski. Krewetki płuczemy i dorzucamy do ryby. Dodajemy sól, pieprz i sok z limonki, całość mieszamy i odstawiamy do zamarynowania. Cebulę i czosnek kroimy w drobną kostkę i podsmażamy na oleju razem z imbirem i pastą curry przez około 5 minut. Następnie wlewamy mleczko kokosowe i dodajemy wody (tyle ile mleczka kokosowego) i zostawiamy do zagotowania. Gdy to nastąpi dodajemy dynię i gotujemy 15 minut. W połowie gotowania wrzucamy posiekaną kolendrę, Następnie wrzucamy rybę i krewetki i dusimy całość około 5 minut. Danie podajemy posypane kolendrą. Świetnie pasować będzie curry również ryż.
