Rozgrzewające curry z batatami, soczewicą i kurczakiem

danie jednogarnkowe, kolacja, obiad, zdrowo / sobota, 14 marca, 2020

Dobrze już wiecie, że uwielbiam dania jednogarnkowe! Pyszny, sycący gar samych smakołyków sprawia, że od razu mam lepszy humor 😉 W dzisiejszym daniu połączyłam słodkie ziemniaki z kurczakiem, soczewicą, szpinakiem i pomidorami, a dodatek mleczka kokosowego sprawia, że danie nabiera orientalnego smaku. To zabieramy się za gotowanie 🙂 Jeśli wolicie wegańską wersję wystarczy, że pominiecie dodatek kurczaka i gotowe!

składniki na 2 porcje:
1 cebula
3 ząbki czosnku
1 łyżka oliwy z oliwek
1 batat
50g soczewicy
200g piersi z kurczaka
150g ciecierzycy z puszki
60g ryżu arborio
400g pomidorów z puszki
2 łyżeczki koncentratu pomidorowego
100g szpinaku baby
130g mleczko kokosowego
przyprawy: sól, pieprz, 1 łyżeczka słodkiej papryki, 1/2 łyżeczki ostrej papryki, pół pęczka natki pietruszki

Przygotowanie:
Na oliwie przysmażamy pokrojoną w kostkę cebulę i czosnek przeciśnięty przez praskę. Batata i kurczaka kroimy w kostkę i dodajemy do garnka wraz z przyprawami. Podsmażamy wszystko 3 minuty i dodajemy pozostałe składniki: soczewicę, ciecierzycę, ryż, pomidory, koncentrat pomidorowy, mleczko kokosowe, posiekaną natkę pietruszki i 0,5 litra wody. Dusimy wszystko pod przykryciem ok. 20-25 minut. Dodajemy szpinak i gotujemy jeszcze 5 minut.
