6.12 – Muffinki z kokosem, bananem i marchewką

Czas leci nieubłaganie. Jeszcze nie tak dawno żegnaliśmy upalne lato, a tu mamy już Mikołajki! Święta coraz bliżej, powoli zaczynamy przygotowania w Naszych domach. Przygotowania pełną parą również na blogu!
W najbliższym czasie czeka Was masa pysznych świątecznych przepisów. A tymczasem mój prezent dla Was na Mikołajki – pyszne i zdrowe muffinki! Alternatywa dla napełnionych cukrem cupcake’ów! Ale smakują cudownie 🙂 Poczujmy już dziś ten świąteczny klimat! Cudownych prezentów na Mikołajki 🙂

składniki:
na 12 muffinek
80 g masła
1 łyżeczka cynamonu
pół łyżeczki mielonego ziela angielskiego
pół łyżeczki kardamonu
pół laski wanilli
4 łyżki miodu
150 g mąki kokosowej
4 marchewki
1 dojrzały banan
40 g wiórków kokosowych
4 białka
2 żółtka
200 ml mleka
na wierzch
200 g serka typu Philadelphia
łyżka miodu
siekane migdały
Do rondelka wrzucamy masło, miód i wszystkie przyprawy i podgrzewamy, aż wszystkie składniki dobrze się połączą. Odstawiamy na 10 minut. Marchewkę trzemy na grubych oczkach. Do dużej miski wsypujemy mąkę kokosową i wiórki. Banana rozgniatamy i dokładnie łączymy z marchewką i dorzucamy do suchych składników. Następnie dodajemy miód z masłem i mieszamy. Kolejno wlewamy mleko i żółtka. Całą masę dokładnie mieszamy. Białka ubijamy na sztywną pianę i powoli łączymy z całą masą. Formę na muffinki wykładamy papilotkami wysmarowanymi olejem i wkładamy w nie masę aż po brzegi. Muffinki pieczemy 25-35 minut w temp 180 stopni. W tym czasie serek łączymy z miodem i gdy muffinki wystygną smarujemy je na wierzchu i posypujemy posiekanymi migdałami. Smacznego!
