dzień dobry kochani Czytelnicy!
z opóźnieniem, ale jest! 13 odsłona lunchboxowych przepisów 🙂

te upały dały się mocno we znaki, więc w lunchboxach lekkie kolorowe dania. Smak dzieciństwa i przepyszny makaron z twarogiem z dodatkiem borówek i cukru kokosowego – koniecznie spróbujcie 😉 Trochę konkretniejsza sałatka grecka bo z kurczakiem i dodatkiem tortilli. Przyznaję, że ogarnął mnie mały leń i idąc na łatwizną, wykorzystałam kupną tortillę.
A na drugie śniadanie rządził jogurtowiec – ekspresowy letni deser z ulubionymi owocami 🙂

1. PONIEDZIAŁEK

śniadanie: Jajecznica, parówki, pomidory i bułeczka
drugie śniadanie: Jogurtowiec na zimno z malinami i borówkami
lunch: Makaron z twarogiem, cukrem kokosowym i borówkami

Jajecznica, parówki, pomidory i bułeczka
składniki:
2 jajka
1 łyżeczka masła
1 parówka 100% mięsa (drobiowa lub wieprzowa)
1 pomidor
pół bułeczki
szczypiorek
Na rozpuszczonym maśle wbijamy 2 jajka i mieszamy, aż jajka sie zetną do pożądanej konsystencji, posypujemy szczypiorkiem. Podajemy z podgrzaną parówką, pomidorem i bułeczką.

Jogurtowiec na zimno z malinami i borówkami
składniki na 4-5 porcji:
2 jogurty greckie proteinowe po 150g
200g serka homogenizowanego waniliowego
18g żelatyny
80g mleka
2 łyżki miodu
W garnuszku mieszamy zimne mleko, żelatynę i podgrzewamy, aż żelatyna się rozpuści. Pozostałe składniki dokładnie mieszamy i jak mleko z żelatyną trochę przestygnie również mieszamy z pozostałymi składnikami. Przelewamy do prostokątnego naczynia i dodajemy na wierzch maliny i borówki. Odstawiamy do lodówki, aż jogurtowiec stężeje. Dzielimy na 4-5 części i każdą zabieramy na drugie śniadanie 🙂

Makaron z twarogiem, cukrem kokosowym i borówkami
składniki na 2 porcje:
200g makaronu
250 g sera twarogowego chudego
łyżka masła
na każdą porcję:
1 łyżeczka cukru kokosowego
1/2 łyżeczki cynamonu
garść borówek
Makaron gotujemy w osolonej wodzie do miękkości, odcedzamy. Na patelni rozpuszczamy masło i dodajemy makaron. Mieszamy i zdejmujemy z ognia. Posypujemy pokruszonym twarogiem. Każdą porcję posypujemy cukrem, cynamonem i podajemy z borówkami.

3. ŚRODA

śniadanie: Naleśniki z twarogiem i musem truskawkowym
drugie śniadanie: Jogurtowiec na zimno z malinami i borówkami
lunch: Sałatka grecka z kurczakiem i tortillą

Naleśniki z twarogiem i musem truskawkowym
składniki na 4-5 naleśników:
szklanka mleka
szklanka mąki
2 jajka
1 łyżka miodu
Wszystkie składniki dokładnie mieszamy i smażymy naleśniki na rozgrzanej patelni bez tłuszczu.
twarożek grani 200g
1 łyżeczka miodu
zmiksowane truskawki
 Dwa naleśniki napełniamy twarożkiem połączonym z miodem. Składamy w trójkąty i polewamy zmiksowanymi truskawkami.

Jogurtowiec na zimno z malinami i borówkamiPRZEPIS POWYŻEJ 🙂

Sałatka grecka z kurczakiem i tortillą
składniki na 3 porcje:
2 małe piersi z kurczaka
1-2 łyżeczki przyprawy do kurczaka
1 łyżka oleju
na każdą porcję:
garść pomidorków koktajlowych
1/4 czerwonej papryki
1 mały ogórek
1/4 sera feta
1/4 czerwonej cebuli
garść rukoli
garść oliwek
1 łyżka oleju rzepakowego
1 łyżeczka octu balsamicznego
do podania: pełnoziarnista tortilla
Kurczaka kroimy w kostkę i podsmażamy na oleju. Posypujemy przyprawą i smażymy ok. 7 minut, aż kurczak będzie gotowy. Pomidorki kroimy na pół, ogórka w półksiężyce, cebulę w piórka, paprykę w słupki, a ser feta w kostkę. Wszystkie składniki mieszamy ze sobą wraz z 1/3 usmażonego kurczaka. Polewamy olejem i octem balsamicznym. Podajemy z tortillą.
