Kokardki z cukinią

Kto z Was nie lubi makaronu z pysznym sosem? Ostatnio staram się wybierać tylko ten pełnoziarnisty. W dzisiejszym przepisie z pysznymi i zdrowymi warzywami, czyli selerem naciowym i cukinią! Mam nadzieję, że Wam się spodoba! 🙂

składniki:
2 porcje

200 g makaronu pełnoziarnistego kokardki
pół cukinii
pół cebuli
3 łodygi selera naciowego
4-5 łyżeczki koncentratu pomidorowego
5 łyżek wody
sól, pieprz, bazylia, papryka ostra
2 łyżeczki oleju
opcjonalnie: (cukier jeśli danie jest zbyt kwaśne)

Makaron gotujemy al dente w osolonej wodzie. Na oleju przysmażamy cebulę pokrojoną w plasterki. Do tego dorzucamy seler naciowy pokrojony w plasterki. Przysmażamy około 5-7 minut. Cukinie również kroimy w pół plasterki i dodajemy do garnka. Gdy cukinia będzie miękka dodajemy koncentrat, wodę i przyprawy. Makaron wrzucamy do garnka i mieszamy z sosem. Danie gotowe!
