Pomidorowe risotto z krewetkami

Szybki, jednogarnkowy obiad z pysznymi owocami morza. Krewetki są ogólnodostępne i można trafić na naprawdę dobrą cenę. Przepis na tradycyjne risotto przedstawiałam już nie raz.

Tym razem z kilkoma innymi dodatkami stworzyłam danie o zupełnie innym smaku! Jeśli nie jesteście zwolennikami krewetek możecie zamienić je na kawałki łososia lub dorsza. Albo po prostu spróbujcie ich w takim wydaniu i może Wasze kubki smakowe je pokochają!

składniki:
225 g krewetek
2 marchewki
6-7 pieczarek
100 g ryżu arborio lub parabolied
pół cebuli
1 łyżeczka oleju kokosowego
50 g przecieru pomidorowego
bulion

Na łyżeczce oleju przysmażamy pokrojoną w kostkę cebulę i marchewkę. Po około 5-7 minutach dodajemy pieczarki pokrojone w ćwiartki. A następnie dodajemy ryż, podsmażamy 2 minuty i zalewamy szklanką bulionu i czekamy, aż ryż ‘wypije’ płyn. Kontynuujemy czynność, aż ryż będzie miękki. Pod koniec gotowania dodajemy krewetki i przecier pomidorowy. Jeśli jest konieczność doprawiamy solą, pieprzem i natką pietruszki.

tłuszcze: 8 g
