Paczuszki z pstrągiem, suszonymi pomidorami i pieczarkami

Ciasto francuskie to naprawdę wdzięczny produkt. Można dodać do niego tak naprawdę wszystko i za każdym razem otrzymamy inne danie. Dzisiaj wytrawne paczuszki z pstrągiem – idealne na obiad, ale świetnie też sprawdzą się na kolację. Można zrobić więcej i bez problemu przygrzać później lub nawet zjeść na zimno! Zabierajcie się do gotowania! 🙂

na 6 paczuszek:
ciasto francuskie lekkie
10-12 pomidorów suszonych
250g pieczarek
2 jajka
3 łyżki śmietany
foremki aluminiowe na suflety lub muffiny marki GOSIA
1 filet pstrąga łososiowego
sól, pieprz
natka pietruszki
do podania sałatka: ogórek świeży, garść pomidorów koktajlowych, kiełki rzodkiewki, garść orzechów nerkowca, ćwierć główki sałaty lodowej, sól, pieprz, ocet balsamiczny (1 łyżeczka), oliwa z oliwek (3 łyżeczki), sok z cytryny
olej rzepakowy lub kokosowy

Pieczarki kroimy w ćwiartki i przysmażamy na łyżeczce oleju rzepakowego lub kokosowego. Przyprawiamy solą, pieprzem i natką pietruszki. Pomidory suszone kroimy w drobną kostkę. Pstrąga również kroimy w kostkę, pamiętając aby usunąć skórę. Jajka mieszamy dokładnie ze śmietaną i doprawiamy odrobiną soli, pieprzu i natki pietruszki. Ciasto francuskie dzielimy na 6 równych kwadratów i wykładamy nim foremki. Spód nakłuwamy widelcem i smarujemy odrobiną oleju. Na spód kładziemy kilka kawałków pomidorów suszonych, na to pieczarki, kawałki ryby i kolejność powtarzamy, aż do wypełniania wszystkich paczuszek. Następnie zalewamy je masą jajeczno-śmietanową. Paczuszki pieczemy 20-30 minut w temp.180 stopni, aż masa się zetnie, a brzegi ciasta będą rumiane.
Paczuszki podajemy z sałatką warzywną. Pomidory kroimy na ćwiartki, ogórka w półplasterki, a sałatę rwiemy na mniejsze kawałki. Mieszamy wszystko z kiełkami, solą, pieprzem, olejem i octem balsamicznym.
