Zainspirowana Barceloną, czyli nie-hiszpański przepis na pyszne tacos

obiad, podróże, przystawki / piątek, 28 sierpnia, 2015
Oczywiście zdaje sobie sprawę, że tacos to typowe danie kuchni meksykańskiej, a nie hiszpańskiej. Ale właśnie będąc w Hiszpanii spróbowałam pierwszy raz tacos w meksykańskim barze! (inspiracji szukam wszędzie).

Farsz również odbiega od pierwotnego przepisu meksykańskiego (nie na darmo mój bloga ma nazwę kreatywna w kuchni! 😉 ). Tuńczyk świetnie pasuje do pikantnego sosu z dodatkiem warzyw! To rodzaj farszu: wszystko co zostało Ci w lodówce wrzuć na patelnie. Właśnie tak powstał po raz pierwszy w Barcelonie, kiedy po powrocie z plaży zostały nam 2 godziny do samolotu. (tak, byłyśmy diabelnie głodne). A nasza wspaniała koleżanka Kasia wrzuciła na patelnie warzywa, które miałyśmy w lodówce i tak powstał ten wspaniały farsz! I o to chodzi w gotowaniu! Szybko, tanio i pysznie! Zapraszam do gotowania! 🙂

składniki:
na 6-8 tacosów
pół bakłażana
pół cukinii
puszka kukurydzy
puszka tuńczyka w sosie własnym
puszka pomidorów w kawałku
1 cebula
2 ząbki czosnku
1 łyżka oleju rzepakowego
2 łyżki ketchupu
placki kukurydziane
papryka ostra, słodka
sól, pieprz
dip z awokado:
ćwiartka awokado
3-4 łyżki jogurtu
pieprz

Na oleju przysmażamy cebulę i czosnek pokrojone w drobną kostkę. Bakłażana i cukinię kroimy w kostkę i wrzucamy na patelnię. Dodajemy kukurydzę i tuńczyka. Dosmażamy 2 minuty i dodajemy pomidory i ketchup. Doprawiamy solą, pieprzem i paprykami. Całość dusimy 7-9 minut. Placki kukurydziane podgrzewamy w piekarniku, do środka nakładamy farsz i posypujemy natką pietruszki.
Jogurt łączymy z rozdrobnionym awokado i doprawiamy pieprzem.
