Słodko-pikantna bardzo prosta tajska zupa z tofu i krewetkami dzisiaj w menu! Tajskich smaków na blogu zdecydowanie za mało, więc jak najszybciej postanowiłam to zmienić.

Uwielbiam takie sycące zupy z dużą ilością warzyw, a w połączeniu z tofu, krewetkami i makaronem, mamy pełnowartościowy posiłek. Pamiętajcie o dodaniu mleczka kokosowego – cóż to ono robi tutaj całą robotę 🙂 Smacznego!
 
składniki: 
1 cukinia
1 papryka
2 cebule dymki
2 łyżeczki czerwonej pasty curry
1 łyżeczka koncentartu pomidorowego
80 g mleczka kokosowego
180g tofu z bazylią (Lidl)
225g krewetek indyjskich kidi (Lidl)
85g kukurydzy
100g makaronu sojowego
2 łyżki oleju rzepakowego

Przygotowanie:
Cukinię, paprykę kroimy w drobną kostkę, białą i zieloną część dymki posiekać oddzielnie. W dużym garnku rozgrzewamy olej i dodajemy białą część dymki, paprykę oraz cukinię i podsmażamy ok. 3-4 minuty. Czerwoną pastę curry rozpuszczamy w gorącej wodzie i wrzucamy do warzyw. Tofu kroimy w kostkę i wrzucamy do garnka, całość mieszamy i podsmażamy jeszcze 2 minuty. Całość zalewamy wrzątkiem, tak aby przykryć warzywa i jeszcze 2 cm powyżej. Gotujemy 3 minuty i dodajemy krewetki i kukurydzę. Zmniejszamy ogień i gotujemy 10 minut. Na koniec wlewamy mleczko kokosowe, zieloną część dymki i gotujemy jeszcze 5 minut.
Makaron sojowy zalewamy wrzątkiem i odstawiamy na 10 minut. Odcedzamy makaron i przekładamy do zupy.
