Chaczapuri ze szpinakiem, serem i jajkiem

Pozostajemy w temacie ciasta drożdżowego, ale tym razem w wytrawnej wersji. Wspominałam już, że kuchnia gruzińska skradła moje serce i postanowiłam przemycać ją w moim codziennym jadłospisie. Dlatego też, przygotowałam dla Was przepis na chaczapuri ze szpinakiem, serem i jajkiem. To po prostu ciasto drożdżowe wypełnione duszonym z czosnkiem szpinakiem, serem mozzarella i feta, a na wierzchu jajko z idealnie płynnym żółtkiem. Pyszności! Nie jest to najlżejszy przepis, ale może zamiast wieczornego zamawiania pizzy, skusicie się na wspólne gotowanie i przygotowanie takiej pysznej kolacji? 😉

składniki na 2 porcje:

ciasto:
550g mąki pszennej + ok. 3 łyżki do podsypania
15g świeżych drożdży 
1 łyżeczka cukru
2 łyżeczki soli
350ml letniej wody
2 łyżki oleju

nadzienie:
200g świeżego szpinaku
2 ząbki czosnku
1 łyżka oleju
sól
50g fety
50g tartej mozzarelli
50g świeżej mozzarelli
+ do każdego chaczapuri po 10g tartej mozzarelli
2 jajka

Przygotowanie:
Przygotowanie rozpoczniemy od ciasta. Proporcje, które podałam do ciasta starczą na 4 chaczapuri. Zawsze robię z takiej ilości składników i z połowy ciasta robię np. pizzę, a z drugiej połowy chaczapuri. 
W miseczce umieszczamy drożdże, cukier, 2 łyżki mąki i 50 ml wody. Dokładnie mieszamy i odstawiamy na ok. 10-15 minut, aż drożdże zaczną pracować. Do dużej miski wsypujemy mąkę, sól, zaczyn drożdżowy i wodę. Zaczynamy wyrabiać ciasto, aż składniki dokładnie się połączą. Dodajemy olej i ponownie wyrabiamy ciasto. Odstawiamy na 30-45 minut do wyrośnięcia. 

W tym czasie zrobimy nadzienie do chaczapuri. Szpinak dokładnie myjemy i siekamy na drobne kawałki. Na patelni rozgrzewamy olej, dodajemy szpinak i chwilę smażymy. Dodajemy sól i przeciśnięty przez praskę czosnek. Szpinak dusimy, aż woda odparuje i odstawiamy do wystygnięcia. 
Fetę, tartą mozzarellę i posiekaną świeżą mozzarellę mieszamy dokładnie ze sobą. 

Ciasto dzielimy na 2 części – jedną część odkładamy np na pizzę, albo dodatkowe chaczapuri. Drugą połowę ciasta dzielimy na pół. Jedna połówkę ciasta podsypujemy mąką i wałkujemy na okrągły placek o śr. ok 25 cm. Posypujemy ciasto tartą mozzarellą, a następnie dwa brzegi z jednej i z drugiej strony rolujemy, a następnie brzegi zlepiamy ze sobą (tak jak na zdjęciach). Do kieszonki przekładamy połowę szpinaku i dodajemy połowę mieszanki serów. Czynność powtarzamy z drugim chaczapuri. Chaczapuri wstawiamy do piekarnika nagrzanego do 180 stopni na 15 minut. Po tym czasie wyjmujemy chaczapuri i wbijamy na środek jajko. Wstawiamy ponownie do piekarnika na ok. 5 minut tak, żeby białko się ścięło, a żółtko pozostało płynne.
